Ingredients:
- Juice of 1 lemon
- Olive oil
- Handful of garlic cloves, whole
- Salt and Pepper to taste
- 2kg lamb leg
- 6 potatoes, whole and with skin
- 2 red onions, quartered
- 1 tbsp dried mixed herbs
- 2 garlic cloves, crushed
- Salt and Pepper to taste
- Combine lemon juice,olive oil, crushed garlic, dried mixed herbs, salt and pepper. Rub into skin of meat.
- Roast lamb in 180 degree celcius for appox 2 hours or until the juices runs clear when you test with skewer.
- 45 to 60 minutes before the lamb is ready, add in potatoes,onion and garlic cloves. Drizzle 1 tbsp of olive oil on top.
TIPS:
- Roast approx 1 kg per hour
