Cayenne Pepper Chicken

For this recipe you will need:


8 chicken drumsticks
1 tbsp of cayenne pepper or depends on your taste
2 tbsp olive oil or any cooking oil
1 onion, thinly sliced
2 red capsiums, thinly sliced
2 gourmet tomatoes, thinly sliced
1 garlic clove, finely chopped
Salt and freshly ground black pepper

Here are the steps:

1. Score the skin on the drumsticks with a sharp knife. Sprinkle the chicken all over with salt and black pepper.

2. Place a large heavy frying pan on medium-high heat. Drizzle oil into the hot pan and add the chicken, skin side down. Cook for 5-10 minutes or until golden brown all over. Transfer to a plate.

3. Add the onions and sauté for 2 minutes. Add capsicum, tomatoes and garlic and sauté for 4 minutes or until the capsicum has softened slightly. Season the vegetables with salt and pepper to taste and cayenne pepper.

4. Return chicken to the pan. Mix well. Cover and simmer for 10 minutes until the chicken is cooked through.

5. Serve with rice
