2 tbsp olive oil or any cooking oil
½ brown onion, thinly sliced
1 garlic clove, finely chopped
400 g cup mushrooms, sliced
500 g green beans, ends trimmed
Salt and pepper to taste
1 tbsp of lemon juice or 1 tsp sesame oil
1.Cook the green beans briefly in salted boiling water for 2–3 minutes, or until just tender and vibrant green. Drain and set aside
2.Heat the oil in a large frying pan over medium-high heat. Cook the onion for 2–3 minutes to soften. Add the garlic and mushrooms and cook for 5–6 minutes until softened and lightly browned.
3.Mix in the beans and add salt and pepper to taste
4. Serve on a plate and sprinkle lemon juice on it OR for oriental taste mix well with 1 tsp of sesame oil before serving.
