Mediterranian Chicken

  • 2 chicken fillet (I use thigh), cut a few slits both side
  • 2 tbsp oil
  • 1/2 lemon, juiced and zest
  • 1/2 tbsp vinegar
  • 1/2 tbsp wine / shoa xing wine
  • 1 tsp sugar
  • 2 cloves garlic, minced
  • 1 tsp dried mixed herbs
  • salt and pepper to taste

  1. Marinate chicken fillet with all the ingredients listed for at least an hour or 2.
  2. Heat up oil in a pan at medium high heat. Lay chicken smooth side down in the pan until golden brown about 4 minutes. Then turn the fillet over and let it cook through.
  3. A minute before you want to remove the fillet from pan, pour marinade into pan and let it boil. At the same time taste the marinade sauce and adjust seasoning to your liking. 
  4. Serve hot.
